1987 Fleer Update Glossy Set & 1988 Fleer Glossy Set

I'd say keep them intact. Singles aren't that tough to find. The sets themselves don't have enough high demand singles to justify it. A Maddux just sold for $3.02 in PSA 9, ungraded copies often go in the $1-2 range. After you sell the Maddux, and maybe the McGwire, you've got a handful of other cards that don't carry much premium over the base versions. The 1988 set might do okay as singles, but I wouldn't figure it'd do well enough to justify the extra auction fees.
 
Quite awhile back I traded an unopened set of each,here on the
Bench.
I'd say keep as sets and if they're unopened even better.

Sets like that it's much easier to keep them intact and sealed, even that way you're not going to get much for them I'm afraid.
 
Thanks for the info folks. I have to agree with Matt. After looking at completed auctions for the sets, they won't go for much. Thats why I was even considering breaking them up in the first place.
